Apple Cider Pancakes with Maple~Soaked Spiced Apples

Do you love breakfast for dinner??  

Our family loves breakfast for dinner, and especially on these chilly November evenings.  It's so comforting and truthfully, it's such an easy dinner to pull together... no one has any complaints about the menu.

Really, not one single disapproving peep... just smiles and hungry kids, I love dinners like that!
What's not to love about pancakes?? ...and especially these seasonal piping-hot, stacks of deliciousness!!
This was a fabulous way to use up some of my left-over apples and apple cider from our weekend backyard get-together.
I used Bisquick --the recipe right on the back of the box, with a few simple additions:


 2 cups Bisquick
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1 tablespoon sugar
1 teaspoon of baking powder 
(Yes, the mix has some in it, adding extra helps fluff them up)
Mix the above dry ingredients together, set aside.
1/2 cup milk
1/2 cup apple cider
2 eggs, lightly beaten
Add the wet ingredients to the dry ingredients.

Mix together, until just combined, let rest for 5 minutes. 
Follow the directions on the box for cooking the pancakes.

Peel and slice 5 -7 small Honey Crisp Apples
 4 ounces of pure 100% Maple Syrup 
 (I used half of a small bottle of real maple syrup)
2 TBS butter
1/2 teaspoon pumpkin pie spice
Add  sliced apples and butter to a skillet on medium heat.
Let butter melt, and the apples warm up.
Sprinkle pumpkin pie spice over apples.
Cook for 7 minutes-or until apples begin to soften.
Add maple syrup.
Continue to heat until apples are soft and the syrup is hot.
Ladle onto fresh apple cider pancakes!

Theses apple cider pancakes pair well with, apple cider, tall glasses of frosty milk, and cheesy hash browns... Enjoy!!
